Spring rolls filled with special filling

Spring rolls are one of the most delicious appetizers that decorate the dining room and are wanted by all family members. Here is a new way to prepare it with a special filling.

Ingredients:

50 g thin rice noodles
Half a cup of minced chicken
Half a cup of shrimp – washed, peeled and cut into small pieces
2 large eggs, beaten
1 grated carrot
4 sliced ​​mushrooms
2 green onions, chopped
Half a teaspoon white sugar
Half a teaspoon of salt
1 teaspoon ground black pepper
24 rice rolls
2 cups vegetable oil for frying

How to prepare:

Soak the rice noodles in cold water until soft for 20 minutes. Combine noodles, chicken, shrimp, eggs, carrots, mushrooms and green onions in a large bowl. Sprinkle with sugar, salt and black pepper and stir well.
Soak 1 cover of rice paper in a bowl of warm water to soften it for about 15 seconds. Remove from water and place on a damp cloth on a flat surface.

Place a tablespoon of the filling mixture in the center of the softened rice paper. Fold the bottom edge in the middle to cover the filling. Then fold the opposite edges and wrap tightly. Repeat with the rest of the rice paper wrappers.

Heat the oil in a large frying pan over medium heat.
Fry the spring rolls in batches until crispy and golden brown on both sides. Then put it on a paper towel to get rid of the oil. Serve with soy sauce, sweet chili sauce and pickles, if desired.
